Use your left hand with some plastic sheet to catch the slices, like the sheets used in deli shops. When one sheet is full you can either put it aside and take another one or you can turn it upside down on a plate and keep slicing on the same sheet until done. You can have the slices line up as perfectly as you want on the plastic sheet instead of in a big mess on a plate. Semifreezing the meat really helps so that was a good idea, especially raw meat sliced thinly.
